Penne Alla Crudaiola

500g bag of penne pasta
pint of cherry tomatoes
generous handful of basil
1 cup of grated rocotta salata (goat's cheese can be substituted)
just less than 1/4 cup extra-virgin olive oil.
 
1. Cook pasta according to the instuctions.
 
2. Slice cherry tomatoes in half.
 
3. Grate cheese (medium).
 
4. Chop basil.
 
5. Place cherry tomatoes, cheese and basil along with the oive oil, into a big bowl and toss (the cheese and oil will form a creamy sauce).
 
6. Drain pasta and add to bowl.
 
7. Toss until the sauce coats all the penne
 
8. Optional: add a big handful of baby arugula at the end for a salad plus an entree all in one bowl).
