Orange-Blossom Lamb

8 lamb chops
2 tbsp (25 ml) butter
1 can orange juice concentrate, thawed
1 medium onion, sliced
2 tsp (10 ml) soy sauce
1 tsp (5 ml) salt
Dash pepper
1. In large skillet, brown lamb chops in butter over medium heat.  Add remaining ingredients and mix well.
2. Reduce heat; cover and simmer 20-25 minutes or until meat is tender, turning once. To serve, spoon sauce over lamb.
Serves 4
