Chicken with Creamy Dijon Herb Sauce

1 tbsp (15 ml) oil
4 boneless chicken breasts
1 tbsp finely chopped onion
1/3 cup (75 ml) chicken broth
1/3 cup (75 ml) light mayonnaise
1/4 cup (50 ml) dijon mustard
1 tbsp (15 ml) finely chopped fresh herbs (parsley, basil, oregano, chives)
 
1. Heat oil in large nonstick skillet. Cook chicken 10 minutes until golden on both sides
 
2. Add onion and cook 1 minute
 
3. Stir in broth, mayonnaise and mustard. Heat just to a boil. Simmer, stirring 4 minutes until sauce thickens slightly. Stir in herbs.
 
4. Serve with your favourite sides
