Baked Cinnamon French Toast

1 non-stick cooking spray
3 Eggs
125 mL (1/2 cup) Skim Milk
50 mL (1/4 cup) Maple Syrup
30 mL (2 Tbsp) Melted Margerine
5 mL (1 tsp) Vanilla Extract
5 mL (1tsp) Ground Cinnamon
6 slices whole grain bread
125 mL (1/2 cup) Rasperries or Blueberies (optional)
 
1. Preheat oven to 180 Celcius (350 F)
 
2. Grease a 33 X 22 cm (13 X 9 inch) baking dish with non-stick cooking spray. Lay bread in dish.
 
3. In bowl, beat eggs with milk, syrup, margeine, vanilla and cinnamon. Pour egg mixture evenly over bread. Bake uncovered for 30 minutes or until firm to the touch.
 
4. Serve hot and add fruit if desired.
